Water City Mishima and Eel

Mishima City has long flourished as a temple town for Mishima Taisha Shrine and as the 11th post town on the Tokaido Road. It is also known as a city of water, with underground water from Mt. Fuji springing up all over the city, and the rich soil and climate of the western foothills of Hakone nurture delicious ingredients. It is also rich in nature that has continued since ancient times, such as Mishima Taisha Shrine, famous for its 1200-year-old golden osmanthus tree and 15 cherry trees of 200 varieties, Rakujuen Garden, designated as a national "natural monument and scenic spot," and the ruins of Yamanaka Castle, selected as one of Japan's 100 most famous castles. It is also a city of history and art, beloved by many writers such as Wakayama Bokusui, Dazai Osamu, and Inoue Yasushi, and where Minamoto no Yoritomo aspired to revive the Genji clan.

Mishima's water, sourced from the pure spring water of Mt. Fuji, has long been known as a famous source of water. By exposing the eels to the oxygen-rich water for several days, the characteristic fishy and muddy smell is eliminated, excess fat is removed, and the original flavor is brought out. The secret to the deliciousness of Mishima eels is that the meat is firmed by the clear water, a blessing from Mt. Fuji.

"Three years to split, eight years to skewer, a lifetime to grill." The flesh is carefully opened. The delicate grilling requires skill and sensitivity. The family sauce has been added to over the years. The final result is different depending on how the fan is used. After steaming in a copper steamer, the fish is thoroughly grilled at high temperature, with just the right amount of fat left, resulting in a soft, rich flavor that you will never tire of.
