A "Knife Ceremony" will be held at the "Washoku Exhibition Shizuoka" to allow participants to experience Japanese food culture!

On Sunday, November 9, 2025, as a special event at the "Washoku Exhibition Shizuoka," the traditional "Shijo Ceremonial Knife" will be on display.ShinryuThe knife ceremony was held at Shimizu Marine Building.

The knife ceremony is a ritual that has been passed down as an Imperial Court event since the Heian period, in which a chef prepares ingredients using only a knife and chopsticks without touching the fish or poultry, and then offers them to the altar. There are very few chefs in the country who can perform this ritual, and this time it was performed by the Zuishokai, a group of chefs based on the Shijo Shinryu school of Japanese cuisine.

At the ceremony, Chef Noritaka Kishimoto of Elecom Atami Club (Atami City) served as the sword master and beautifully prepared a tuna for the theme "Ookabuto no Maguro" (Big Helmet Tuna), which drew thunderous applause from the audience.

Many people arrived early in the morning or traveled from far away to catch a glimpse of the rare knife ceremony, and the venue was filled with excitement and was a huge success. Through this ceremony, which conveys the elegance of the Heian period to the present day, visitors had a valuable experience of coming into contact with the depth of Japanese food culture and the essence of the chef's skills.

The Shizuoka Washoku Exhibition will be held until December 14th. In addition to the permanent exhibition, you can also enjoy special events such as tastings and samplings of Shizuoka's specialty products.
