What is the Food and Hot Spring Culture Forum?
Shizuoka Prefecture is a treasure trove of ingredients that take advantage of its unique topography and natural features, such as Mt. Fuji, a World Cultural Heritage Site, the Izu Peninsula, a UNESCO Global Geopark, Suruga Bay, and Lake Hamana. We have built a rich food culture by serving seasonal delicacies woven with blessings and people's thoughts. In addition, this prefecture is one of the leading hot spring areas in Japan with over 2,000 hot springs, and the Izu area, where more than 90% of them are located, is a historical hot spring area that attracted literary greats such as Yasunari Kawabata and Yasushi Inoue. The Fujinokuni Food and Hot Spring Culture Forum, which is held as part of the East Asian Cultural City project, aims to promote the prefecture by disseminating domestically and internationally the prefecture's proud food culture and hot spring culture, which are closely related to tourism. In addition to attracting tourists, we hope to provide an opportunity for people to rediscover their own local culture and develop its value, leading to an increase in the number of people interacting with the area and a sense of pride in the area.

“Connecting the food baton and creating new value”
In order to pass on Japan's food culture to the next generation and to disseminate it domestically and internationally, we need producers and chefs to judge the ingredients they produce and prepare them to match the dishes the chefs want to make. The existence of a “connector” is important. We will think about the importance of passing on the food baton in order to create new flavors, values, and possibilities that can only be eaten here.

"Possibilities of gastronomy tourism - Conveying the charm of local food"
Gastronomy tourism, which communicates local ingredients and culture through food, is attracting worldwide attention.
Shizuoka Prefecture, which has a diverse climate including Japan's tallest Mt. Fuji and Japan's deepest Suruga Bay, is a kingdom of ingredients, producing 439 agricultural, forestry and fishery products that rank among the top in Japan. In addition to tourism resources such as beautiful scenery and hot springs, the prefecture is working to popularize gastronomy tourism, which aims to experience food and food culture.
We will focus on the potential of gastronomy tourism in Shizuoka Prefecture through a panel discussion of Fujinokuni's culinary capital creators, who use Shizuoka ingredients and express local culture in their dishes.
